Ever finish the front nine, and skip the Snack Bar because you’re in a big hurry to get through the round ASAP? Well, former Chef Efren once churned out his savory Chicken Ciabatta in about two minutes! (Now, the folks at Everybody’s Snack Bar & Pizza, and the Stillery, are here to care for you.) So take off that edge, and you might even play better.
You can try this at home, but might I suggest you let them do it for you? Here’s Efren’s recipe….
Ingredients
- 4 thin chicken cutlets (about 1 lb.)
- 1/4 cup Italian dressing
- 1 jar (210 mL) roasted red peppers, drained
- 1 loaf ciabatta bread (about 16 in.), halved lengthwise
- 2 garlic cloves, pressed
- 1/4 teaspoon (or more) coarse kosher salt
- 1/2 cup mayonnaise
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
Directions
- Grill chicken, brushing frequently with Dressing, 15 minutes or until chicken is thoroughly cooked.
- Toast chiabatta roll.
- Top with chicken and roasted pepper.
- Meanwhile, mash garlic and 1/4 teaspoon salt in small bowl until paste forms. Whisk in mayonnaise, olive oil, and lemon juice.
- Put it all together and top with sauce.
- Season to taste with coarse salt and pepper
- To serve, cut into 2 pieces
